Instant Raw Mango Pickle | Manga Oorugai Recipe is a fresh pickle prepared with raw mango during seasons. This wonderful instant pickle is made by chopping mangos, adding spices and tempering with mustard seeds. It pairs well with curd rice, fermented rice, and fermented porridge.

Mango-Pickle-Instant-Mangai

Ingredients

  • 1 Raw Mango
  • 1 tbsp Red Chilli powder
  • a small piece asafetida
  • 1/4 tsp fenugreek
  • a pinch turmeric powder
  • 1/4 tsp Mustard seeds
  • Sesame Oil
  • Salt

Directions

  1. First, roast fenugreek seeds till nice aroma comes and color changes, then atlast add a small piece of asafetida. Then use a manual mortar and pestle to roughly grind fenugreek seeds and asafetida. Keep the coarse powder aside.
  2. Chop raw mangoes into small pieces.
  3. Then add chilli powder, turmeric powder, salt and toss well.
  4. Add powdered fenugreek and asafetida.
  5. Toss well.
  6. Heat oil in a pan, temper mustard seeds and turn off the stove once it is splutter, add it over the mixture.
  7. Mix all together well.
  8. Tasty and Fresh Mango Pickle is Ready.
