Puli Inji | Inji Puli | Tamarind Ginger Chutney Recipe is a spicy, tangy, sweet mouthwatering recipe prepared with tamarind, ginger, chilli and jaggery. It is a delightful everyday food that pairs nicely with plain rice and curd rice and is also an excellent festival recipe.

Ingredients

  • Big Amla Size Tamarind
  • 4 – 5 Green Chilli
  • One finger Size Ginger
  • Few Curry leaves
  • a pinch Turmeric powder
  • 1 tbsp Jaggery
  • 1/2 tsp Mustard Seeds
  • 1/4 tsp Urad dal
  • a pinch asafoetida
  • 3 – 4 tbsp Sesame oil
  • Salt

Directions

  1. Soak tamarind with salt in a cup of water for 15 to 20 min and extract a thick juice.
  2. Heat oil in a pan, temper with mustard seeds, urad dal and wait till they splutter and turn brown.
  3. Then add curry leaves, crushed ginger, chopped green chilli and saute for a few minutes on medium flame.
  4. Add Tamarind salt extract, turmeric powder and let it boil till it gets a little thick.
  5. Finally add jaggery and wait till it dissolves.
  6. Switch off the stove.
  7. Tasty and delicious Puli inji is ready.
  8. Serve with hot rice, curd rice or with Molagootal Recipe.
