Avial is a famous South Indian Recipe which goes well with rice and roti. A delightful avial is produced when veggies and coconut paste are combined. I used beans, drumstick, carrot, raw banana, and other vegetables in this meal. Additionally, we can use vegetables like ash gourd, lentils, and cluster beans. Avial can be prepared in a variety of ways, but this one is quick, easy, and delicious as it uses the most vegetables too.
Ingredients
- 1 Cup Vegetables (Drumsticks, carrots, raw bananas, Beans – all diced)
- 1/4 tsp Cumin seeds
- 1 Cup Grated Coconut
- 2 tbsp Curd
- 4- 7 Green Chilli
- Turmeric (haldi) powder
- 2 – 4 pieces Mango
- Salt
- Curry leaves
- 2 Garlic cloves (optional)
- Coconut oil
Directions
- Grind the cumin seeds, garlic, green chilli and coconut together a smooth paste.
- Heat 1 cup water in a pan; add turmeric powder and little salt.
- Bring to the boil and add the vegetable.
- Put vegetables those that need longer to cook first.
- When the vegetables are almost done, add mango and mix well.
- Mix in the coconut ground mixture.
- Check and add required salt.
- Cook for 2 more minutes and Switch off the Stove.
- Add in the curry leaves, coconut oil and curd on top of it.
- Mix Well.
- Serve hot with any Indian Food.
