Avial is a famous South Indian Recipe which goes well with rice and roti. A delightful avial is produced when veggies and coconut paste are combined. I used beans, drumstick, carrot, raw banana, and other vegetables in this meal. Additionally, we can use vegetables like ash gourd, lentils, and cluster beans. Avial can be prepared in a variety of ways, but this one is quick, easy, and delicious as it uses the most vegetables too.

Ingredients

  • 1 Cup Vegetables (Drumsticks, carrots, raw bananas, Beans – all diced)
  • 1/4 tsp Cumin seeds
  • 1 Cup Grated Coconut
  • 2 tbsp Curd
  • 4- 7 Green Chilli
  • Turmeric (haldi) powder
  • 2 – 4 pieces Mango
  • Salt
  • Curry leaves
  • 2 Garlic cloves (optional)
  • Coconut oil

Directions

  • Grind the cumin seeds, garlic, green chilli and coconut together a smooth paste.
  • Heat 1 cup water in a pan; add turmeric powder and little salt.
  • Bring to the boil and add the vegetable.
  • Put vegetables those that need longer to cook first.
  • When the vegetables are almost done, add mango and mix well.
  • Mix in the coconut ground mixture.
  • Check and add required salt.
  • Cook for 2 more minutes and Switch off the Stove.
  • Add in the curry leaves, coconut oil and curd on top of it.
  • Mix Well.
  • Serve hot with any Indian Food.
