Brinjal Thokku | Kathirikai Thokku Recipe is a popular thick gravy recipe. All types of rice, including pulao, biryani, fried rice, and plain rice, go nicely with kathirikai thokku. Brinjal-Thokku-Kathirikkai thokku recipe

Ingredients

  • 3 nos Tender Brinjal
  • 2 Tomato
  • 1 Onion
  • 1 tsp Chilli powder
  • a pinch Turmeric
  • 1/2 tsp Tamarind extract
  • 1/4 tsp asafoetida
  • 1/4 tsp Mustard Seeds
  • 1/4 tsp Fenugreek Seeds
  • Few Curry leaves
  • Few Coriander leaves
  • Salt
  • Oil

To grind

  • 4-5 Shallot / Small onion
  • 2 Garlic Clove
  • a small piece ginger
  • 1/2 tsp Pepper
  • 1/2 tsp Coriander Seeds
  • 2 Red chilli

Directions

  1. Chop Brinjal into slices and put them in water.
  2. Wash, Peel, chop onions, tomato, garlic.
  3. Grind the ingredients that are listed under to grind and keep them ready.
  4. Heat sesame oil in a heavy bottom pan, splutter mustard seeds, then add urad dal, fenugreek seeds, asafetida and curry leaves.
  5. Then add chopped onions and saute till it gets translucent.
  6. Next, add the tomato and cook for a while, then add the brinjal.
  7. Continue Saute for a while, then add ground paste with turmeric powder, chilli powder and salt.
  8. Just give a stir and add tamarind extract with 1/4-1/2 cup of water.
  9. Put a lid on it and cook it for a while.
  10. Once it gets cooked well the gravy becomes thick and oil separates from the sides of the pan.
  11. Brinjal Thokku is Ready.
  12. Switch off the stove.
  13. Garnish with coriander leaves, Serve with hot rice, Pulao or with Biryani.
