Rasavangi | Kathirikai Rasavangi Recipe is a Tambrahm recipe. It is a kind of arachuvitta sambar with varying amounts of spices. This recipe requires the local purple brinjal, which goes well with lunch.

Rasavangi Kathirikai Rasavangi Recipe Brinjal Brahmin Recipe

Ingredients

  • 4-5 Brinjal
  • 2 tbsp Toor dal
  • a pinch Turmeric powder
  • a small piece Tamarind
  • a pinch asafetida
  • 1 tsp Mustard Seeds
  • 1/2 tsp Urad dal
  • Few Curry leaves
  • Few Coriander leaves
  • Oil
  • Salt

To roast and grind

  • 1 tbsp Coriander seeds
  • 1/2 tsp Pepper corns
  • 1 tbsp Urad dal
  • 1/4 Cup Grated Coconut
  • 3-4 Red Chilli

Directions

  1. Soak tamarind in water and extract its pulp.
  2. Wash and soak toor dal in water.
  3. Heat little oil in a pan, roast coriander seeds, urad dal, pepper, red chilli till we get a nice flavour. Then add grated coconut and just give a toss.
  4. Switch off the flame, then grind it to a smooth paste with little water added.
  5. Cook toor dal, then add chopped brinjal, tamarind extract with turmeric, asafetida and cook till brinjal turns soft.
  6. Then add ground smooth paste with some water and boil it with some salt.
  7. Let them boil for few minutes, then switch off the stove.
  8. Heat oil in a pan to temper it with mustard seeds, urad dal, curry leaves and pour it on top of prepared rasavangi.
  9. Garnish with coriander leaves.
  10. Tasty Brinjal Rasavangi is ready.
  11. Serve hot with hot rice and ghee.
