Coconut Rice Recipe | Thengai sadam is a nutritious and delicious traditional South Indian lunch recipe. With leftover rice, we can quickly make Thengai Sadam. Ingredients
- 1/2 Cup Rice (Thanga Samba Rice)
- 1/2 Cup Grated Coconut
- 2 Green Chilli
- 1 Red Chilli
- 1 tbsp crushed ginger
- Few Curry leaves
- 1/2 tsp Mustard seeds
- 1 tbsp Urad dal
- 8-10 Roasted Cashew
- Coconut Oil
- Salt
Directions
- Wash and Soak Thanga Samba Rice for 20 mins.
- Cook Rice with 1 cup of water.
- Once cooked, add a little coconut oil, gently mix and spread rice on a plate.
- Heat oil in a pan, temper with mustard seeds, urad dal and wait till thy splutter and turn golden.
- Add red chilli, green chilli, crushed ginger, curry leaves and saute for a minute.
- Then add grated coconut and toss it well for just a minute.
- Switch off the Stove.
- Add salt, cooked rice with roasted cashew and mix all well gently.
- Thanga Samba Coconut Rice is Ready.
- Serve Fresh for more benefits with any lightweight vegetable fries.
