Ghee Rice | Thooyamalli Rice Recipe is a simple, quick and aromatic recipe. In this recipe I have used traditional organic white rice thooya malli. You can also use seeraga samba or any other scented rice for more natural flavour and taste. Thooyamalli Ghee rice recipe goes well with all types of kurma.

Ingredients

  • 1 Cup Thooya Malli Rice
  • 2 Onion
  • 10 Garlic Cloves
  • 3-4 tbsp Ghee
  • 10-15 Cashew
  • 2 Clove
  • 1 Bay leaf
  • Oil
  • Salt

Directions

  1. Wash and soak thooya malli rice for 20 mins.
  2. Then drain water and keep aside.
  3. Slice one onion, peel and keep garlic ready.
  4. Heat ghee in a pot, add clove, bay leaf and whole garlic.
  5. Let the garlic turn its color a bit, then add sliced onion and fry till translucent.
  6. Add Thooya Malli rice and stir, add 2 to 2 1/2 cups of water, salt and cook them well till the rice gets cooked well.
  7. Switch off the flame, close it with a lid for a while and keep aside.
  8. Heat a little oil / ghee in a pan, roast broken cashews till it changes color and transfer to a plate.
  9. Then add another sliced onion and fry them till it turns golden.
  10. Once golden brown remove it from the oil and add it to the cooked ghee rice with cashews.
  11. Gently mix all.
  12. Tasty and aromatic Ghee rice is Ready.
  13. Serve hot with any kurma.
