Vegetable Biryani | Seeraga Samba Veg Biryani Recipe is a tasty and delicious recipe. Veggie biryani is almost everyone’s favourite dish, and when made at home with all the vegetables and spices, it also doubles as a healthful dish. In order to create a flavorful feast, I used the traditional rice fragrant Seeraga Samba from Tamil Nadu. You can also use any raw rice too to prepare this recipe. And adding ghee roasted shallots / Onion finally gives a nice flavour and taste to the biryani, which is optional.

Ingredients

  • 1 Cup Seeraga Samba Rice
  • 1 Onion
  • 10 Beans
  • 1 Carrot
  • 1 Tomato
  • 1/4 cup Green Peas
  • 1 inch Ginger
  • 10 Garlic Flakes
  • 2 Green Chilli
  • 1/4 tsp Chilli Powder
  • 1/4 tsp Turmeric Powder
  • 1 Stick Cinnamon
  • 2 Clove
  • 2 Bay leaves
  • 1/2 tsp Poppy seeds
  • 1/2 tsp Fennel Seeds
  • 1 Star anise
  • Few Coriander leaves
  • Salt
  • Ghee / Oil

Directions

  1. Wash and Soak Seeraga Samba rice for just 10 minutes, Drain the water and keep it ready aside.
  2. Fine chop all the vegetables and keep them ready.
  3. Grind Poppy seeds, fennel seeds with green chilli, ginger and garlic to a paste.
  4. In a heavy bottom pot or mud pot, heat 5 spoons of ghee/ oil, add cinnamon stick, clove, bay leaves, star anise and stir.
  5. Then add onion and saute for a while.
  6. Add all the other vegetables except tomato and saute for a while till its half cooked with the lid closed.
  7. Then add tomato with the ground paste and saute till the raw smell disappears.
  8. Add turmeric powder, chilli powder and saute in low flame.
  9. Now, add seeraga samba rice and stir for one or two minutes.
  10. Add salt with 2 to 2 1/4 Cups of water and boil it.
  11. Once it starts to boil reduce the flame to medium and continue cooking till the water gets absorbed.
  12. Once done, Switch off the flames, close it with a lid and keep aside for 15 minutes.
  13. Then remove the lid, add coriander leaves, fluff it gently and again close it for 5 to 10 minutes before serving.
  14. Delicious and Tasty Seeraga Samba Vegetable Biryani is Ready.
  15. Serve hot with any raita.
