Pulikachal Recipe | Tamarind Rice Mix is a tangy and spicy homemade ready mix prepared with tamarind. Delicious tamarind rice can be prepared by mixing this ready-mix with cooked rice in just a few minutes. For any tamarind-based cuisine, I always use roasted old tamarind since it removes the toxic compounds and aids in healthy nutrition. Keep in mind that consuming too much tamarind is bad for your health.
Ingredients
- Big Lemon Size Tamarind
- 2 tbsp Ground nut
- 1/4 tsp Chana dal
- 1/2 tsp Mustard Seeds
- a pinch asafoetida
- 1/4 tsp turmeric powder
- 3 Red Chilli
- Few Curry leaves
- 3 – 5 tbsp Sesame Oil
- Salt
To Make Pulikachal Powder
- 1/2 Cup Chana dal
- 1/2 tbsp Pepper
- 1 tbsp Fenugreek Seeds
- 1/2 tsp Coriander Seeds
- 6 Red Chilli
Pulikachal Powder
- In a heavy bottom pan dry roast chana dal, pepper, fenugreek, coriander seeds, red chilli separately till crispy and aroma comes.
- Then let them cool.
- Grind it to fine powder and keep aside.
Directions
- Soak tamarind and salt in water for 20 mins.
- Squeeze it well and extract tamarind juice of approximately 2 cups.
- Heat sesame oil in a heavy bottom pan, temper with mustard seeds, wait till it splutters.
- Then add chana dal, groundnuts and wait till they get roasted.
- Add asafetida, red chilli and curry leaves.
- Then add tamarind salt extract, turmeric powder and boil it for a few minutes on medium flame.
- After a few minutes add prepared pulikachal powder and mix well without lumps.
- Continue boiling for a few more minutes in medium low flame.
- Switch off the stove when it gets thicken as a paste, add two to three spoonfuls of sesame oil and mix well.
- Tangy and Spicy Pulikachal / Tamarind Rice Mix is Ready.
- Once it is cool, transfer it to an airtight container which stays fresh for a few days.
- To prepare Puliyodarai rice, add cooked rice with one or two spoons of pulikachal and mix well.
