Vengaya Vatha Kuzhambu Recipe | Onion Kulambu is a tasty south indian gravy served with rice. The major ingredients in this recipe, along with tamarind water and sambar powder, are immune-boosting small onions and garlic. I haven’t used tomatoes, but they are optional. This Kuzhambu is enhanced in taste and flavour by being prepared in a mud pot.

Ingredients

  • 10 – 15 Shallots / Sinna Vengayam / Small Onion
  • 7 Garlic Cloves
  • 2 tbsp Sambar Powder
  • a pinch Turmeric Powder
  • Amla Size Tamarind
  • Few Curry leaves
  • 1/2 tsp Fenugreek Seeds
  • 1/4 tsp Mustard Seeds
  • 1 tbsp Thalippu Vadagam
  • Sesame Oil
  • Salt

Directions

  1. Peel shallots and garlic.
  2. Soak Tamarind in water for 20 mins and extract the pulp.
  3. Heat sesame oil in a pan, splutter mustard seeds, then fenugreek seeds followed by thalippu vadagam and wait for them to sizzle.
  4. Then add peeled shallot, garlic and curry leaves.
  5. Saute for a while till the onions get translucent.
  6. Add turmeric powder, sambar powder and give a stir in low flame, then add tamarind pulp with water and salt, let it boil for 5 mins.
  7. Then reduce the flame to medium low and let it boil till it gets thick kuzhambu consistency.
  8. Tasty Onion Kulambu is ready.
  9. Serve hot with rice, kootu, poriyal and papad.
