Chettinad Kavuni Arisi | Black Rice Sweet Recipe | Karuppu Kavuni Inippu is an authentic Traditional Chettinad recipe. For more than a century, it has been used at almost all gatherings and weddings in the Chettinad region. The glutinous rice known as Karuppu Kavuni, also known as black rice or kavuni, appears purple when cooked and has a stickiness to it.

Ingredients

  • 1 cup Black rice / Kavuni arisi
  • 1 Cup Jaggery powder
  • 1/2-1 Cup Grated Coconut
  • 2-3 tbsp Ghee

Directions

  1. Black rice or Karuppu Kavuni rice should be washed and soaked in 4-5 cups of water for 6–8 hours or overnight.
  2. After 8 hours with the soaked water (add some more water if required) cook the kavuni rice till it gets soft.
  3. Once the rice has boiled thoroughly, we can simmer it in a mud pot on a low burner for 20 to 30 minutes.
  4. Once it’s cooked well, mash it well and nicely when it is hot and immediately add jaggery powder, freshly grated coconut and melted ghee.
  5. Mix everything thoroughly.
  6. Healthy and delicious Purple dish Karuppu Kavuni inippu rice is ready.
  7. Serve warm.
