Brinjal Fry | Kathirikai Poriyal Recipe is a simple and easy lunch side dish recipe prepared in just a few minutes. Just Kathirikai is the main ingredient to prepare this recipe with onion, garlic being an optional addition for flavor. You can substitute sambar powder for chilli powder.
Ingredients
- 4 Brinjal
- 1 Onion (optional)
- 1 tbsp Chilli powder
- a pinch Turmeric powder
- Few Curry leaves
- 1/2 tsp Mustard Seeds
- a pinch asafoetida
- Oil
- Salt
Directions
- Chop Onions and Brinjal, put brinjal in water to prevent color change.
- Heat oil in a heavy bottom pan, splutter mustard seeds, add asafetida, curry leaves and onion.
- Saute for a while till the onion is translucent.
- Add chopped brinjal and saute in low flame for a while.
- Then add Chilli powder, turmeric powder, salt and mix well.
- Continue saute till brinjal gets cooked well.
- Once done, switch off the stove.
- Easy and Simple Brinjal Poriyal is ready.
- Serve hot with rice and sambar.
