Brinjal Fry | Kathirikai Poriyal Recipe is a simple and easy lunch side dish recipe prepared in just a few minutes. Just Kathirikai is the main ingredient to prepare this recipe with onion, garlic being an optional addition for flavor. You can substitute sambar powder for chilli powder.

Brinjal Fry Kathirikai Poriyal Recipe

Ingredients

  • 4 Brinjal
  • 1 Onion (optional)
  • 1 tbsp Chilli powder
  • a pinch Turmeric powder
  • Few Curry leaves
  • 1/2 tsp Mustard Seeds
  • a pinch asafoetida
  • Oil
  • Salt

Directions

  1. Chop Onions and Brinjal, put brinjal in water to prevent color change.
  2. Heat oil in a heavy bottom pan, splutter mustard seeds, add asafetida, curry leaves and onion.
  3. Saute for a while till the onion is translucent.
  4. Add chopped brinjal and saute in low flame for a while.
  5. Then add Chilli powder, turmeric powder, salt and mix well.
  6. Continue saute till brinjal gets cooked well.
  7. Once done, switch off the stove.
  8. Easy and Simple Brinjal Poriyal is ready.
  9. Serve hot with rice and sambar.
