Chettinad Kalkandu Vadai | Sweet Medhu Vada Recipe is a special sweet vadai recipe of Chettinad Region. Normally White Kalkandu is added to it; however, for health reasons, I substituted Palm Sugar / Panakarkandu.
Ingredients
- 1 Cup Urad dal
- 1 tbsp Bengal gram dal
- 3/4 Cup Kalkandu (Palm Kalkandu)
- Oil
Directions
- Mix Urad dal and Bengal gram dal together, wash and soak them for an hour.
- Drain and grind dal with very little water.
- When it is nearing ground add kalkandu and grind well.
- Heat oil.
- Wet your hands and take a small portion of the batter and make vada shape with a whole in the center.
- Drop it in hot oil and in a minute reduce flame to medium.
- Flip and cook both sides till it changes its color (golden to brown) and cook well.
- Sweet and Healthy Kalkandu Vada is Ready to Serve.
