Keerai Kootu Recipe is a nutritious dish taken regularly with hot rice and ghee for lunch. It’s always best to take keerai at least four times every week and particularly on fridays as per hindu tradition. In the market we can easily get greens like mulai keerai, sirukeerai, pasalai keerai and arai keerai. We can prepare kootu using the same method as we do in this recipe. In this recipe I used Moong dal to prepare Arai Keerai kootu, you can use toor dal too instead of it.

Ingredients

  • 1 Bunch Araikeerai
  • 4-5 Shallot / Small Onions
  • 4-5 Garlic cloves
  • 1 Tomato
  • 1-2 Green Chilli
  • 1/4 Cup Moong dal
  • a pinch Turmeric Powder
  • a pinch asafetidia
  • 1 tsp Cumin Seeds
  • 2 tsp Ghee
  • Salt

Directions

  1. Take Keerai leaves alone by discarding roots and stems.
  2. Wash, soak and Cook moong dal with little turmeric powder, asafetida.
  3. Soak keerai leaves in water with little salt and turmeric for 5 mins.
  4. Then wash keerai with clean water three times and drain water.
  5. Chop keerai, peeled shallot and tomato.
  6. In a Mud pot add chopped keerai, onion, green chilli, tomato with little water (less than 1/2 cup) and boil it on medium flame.
  7. Don’t cover keerai while cooking.
  8. Stir once in a while and check for water.
  9. Once keerai is cooked well, add cooked moong dal and mix well.
  10. Let it boil for a few more minutes.
  11. Finally add crushed garlic with skin, salt and give a stir.
  12. Immediately switch off the stove.
  13. Start mashing the mixture with traditional wooden mathu or with the back of a round ladle gently and patiently.
  14. Heat ghee in a kadai, add cumin seeds and wait for it to sizzle, switch off the stove.
  15. Add this tempering to the keerai kootu.
  16. Healthy Keerai Kootu is Ready.
  17. Serve hot with hot rice and ghee.
