Vegetable Stock Soup | Poongar Rice Soup Recipe is a healthy and easy soup recipe. We can prepare this soup whenever we prepare boiled vegetables with extra water remaining. When I prepare bean carrot poriyal I boil the vegetables with a little more water to get some vegetable stock and the same with greens / Keerai stock. Im preparing this soup recipe with that remaining veg stock liquid added with some poongar rice starch water. Poongar rice is a traditional red rice of Tamilnadu and a great rice for women. Instead of Poongar rice starch you can use any pesticides free rice starch water to prepare this healthy recipe.

Ingredients

  • 1 Cup Vegetable Stock (Greens, Beans and Carrot)
  • 2 tbsp Carrots
  • 1 Onion
  • 1 Cup Poongar Rice Starch Water (Arisi Vadicha Kanji)
  • a tsp Ghee
  • Pepper Powder
  • a small stick Cinnamon
  • 1 Bay leaves
  • 1 Clove
  • Salt

Directions

  1. Heat ghee in a pan, add cinnamon, bay leaves and clove.
  2. Wait for them to sizzle, then add fine chopped onions, saute till translucent.
  3. Then add fine chopped carrots and saute in low flame for a while.
  4. Add vegetable stock and boil it with carrots.
  5. Once carrots are cooked well add rich starch water, salt and pepper powder.
  6. Let it boil once again.
  7. Switch off the Stove.
  8. Transfer to a serving bowl, garnish with some roasted onions and Serve hot.
