Sugarcane Juice Pongal Recipe | Karumbu Saaru Pongal is a tasty, easy and flavourful recipe. This pongal is easily made with cooked rice. To make this sugarcane juice pongal recipe with only ghee added, I use thanga samba rice. You can also include grapes and cashews that have been roasted in ghee. Traditional Thanga Samba rice has a husk that is a brilliant golden colour. Sugarcane juice pongal can also be made with other types of traditional rice, such as kamban samba rice, seeraga samba rice, etc., in place of thanga samba rice.

Ingredients

  • 1/2 Cup Rice (Thanga Samba)
  • 2 Cup Sugarcane Juice
  • 1 Cardamom
  • a pinch dry ginger powder
  • Ghee

Directions

  1. Wash and Soak thanga samba rice for 30 mins.
  2. Rice should be cooked with 1 1/2 cups of water until it turns mushy and soft.
  3. In the meantime, boil the sugarcane in a pot, then turn down the heat and boil the juice for 7 to 10 minutes, or until it becomes somewhat thicker.
  4. Add the sugarcane juice, the cooked thanga samba rice, and the crushed cardamom. Cook for a further 5 to 10 minutes over a medium temperature.
  5. Add ginger powder.
  6. Add ghee once everything has thickened, then turn off the stove.
  7. Sugarcane juice pongal is ready.
  8. Serve hot.
