Kootanchoru Recipe is a traditional dal and vegetable mixed rice, with a few minor differences from bisibelebath or sambar rice. In this recipe I use traditional milagu samba rice to prepare this recipe which gets cooked quickly as it is small and round in shape compared to other rice variety. Kootanchoru Recipe

Ingredients

  • 3/4 Cup Milagu Samba Rice
  • 1/4 Cup Toor Dal
  • 1 1/2 Cup Dice Cut Vegetables (Carrot, Beans, Drumstick, Brinjal, Pumpkin)
  • 10 Shallot / Small Onion
  • 1 Tomato
  • one handful of Drumstick leaves
  • 1/4 tsp Turmeric Powder
  • 1/4 tsp asafoetida
  • 1/2 tsp Mustard Seeds
  • 1/2 tsp Urad dal
  • Curry leaves
  • 2 tbsp grated Coconut
  • 3-4 Garlic Cloves
  • 4-6 Red Chilli
  • Few Coriander Leaves
  • 1 tbsp Ghee
  • Oil
  • Salt

Directions

  1. In a hot pan add 4 small onions, red chilli, garlic and grated coconut and saute for a few minutes.
  2. Then grind it to a fine paste.
  3. Extract tamarind water and keep it aside ready.
  4. Wash and Soak Rice and toor dal separately for 20 mins.
  5. Half Cook rice and toor dal with 5 cups of water.
  6. Then add vegetables and cook till everythings gets cooked well and mushy.
  7. In a pan heat oil, temper mustard seeds, urad dal, asafetida, curry leaves, remaining small onions, tomato and drumstick leaves.
  8. Saute for a few minutes till everything gets cooked well.
  9. Then add ground masala with turmeric powder and salt.
  10. Let it boil for a few minutes.
  11. Add it to the cooked rice and vegetables.
  12. Let it cook for a few minutes, stir continuously.
  13. Atlast add ghee and garnish with coriander leaves.
  14. Tasty and healthy Tamilnadu Traditional lunch Kootanchoru is Ready.
  15. Serve hot with any poriyal or papad.
