Maa Vathal Kuzhambu Dried Mango Kulambu Recipe Chettinad Recipe

Ingredients

  • 8-12 Nos Maa Vathal / Dried Mango
  • 1/2 Cup Shallot / Small Onion
  • 1 Tomato
  • 10 Garlic Cloves
  • 1 Drumstick (optional)
  • 1 1/2 tsp Sambar Powder
  • 1/4 Turmeric Powder
  • Small Amla Size Roasted Tamarind
  • 1/4 tsp Mustard Seeds
  • 1/4 tsp Fenugreek seeds
  • 1/2 tsp Cumin Seeds
  • Few Curry leaves
  • 2 tbsp Sesame Oil
  • Salt

Directions

  1. Wash and Soak Maa Vathal in Hot water for 20 mins.
  2. Soak tamarind with salt in water and extract pulp and keep aside, add tamarind according to maa vathal sour taste.
  3. In a pan, heat sesame oil, add mustard seeds and wait till it splutters.
  4. Then add Fenugreek seeds, cumin seeds and wait till it pops in low flame.
  5. Add Curry leaves, small onions, garlic, drumstick and saute till onions get translucent.
  6. Add tomato and saute till it gets soft, then add sambar powder, turmeric powder and stir.
  7. Then add soaked maa vathal, tamarind salt extract with required water and let it boil.
  8. Let kulambu boil for 10 mins in medium low flame.
  9. Check and make sure the drumsticks are cooked.
  10. Switch off the Stove.
  11. Serve hot with Rice.
