Carrot rice recipe is a kids favorite lunch box recipe which can be prepared in a few minutes with cooked rice. Kids prefer simple food with few spices, like the variety rice cooked with carrots. If you’re making this carrot rice for everyone, you can increase the spice level by adding red chilli powder, additional red or green chilies, or both. You can eat this delicious South Indian variety rice with papad or with any spicy poriyal.

Ingredients

  • 1/2 cup rice (Kichili Samba Rice)
  • 3/4 cup Grated Carrot
  • 2 Red Chilli
  • 3 teaspoon Ghee
  • ½ tsp Mustard
  • 1 tsp Urad dal
  • Few Curry leaves
  • Asafetida
  • Salt

Directions

  1. Wash and soak kichili samba rice in clean water for 20 mins.
  2. Then cook rice with 1 – 1 1/4 cup water.
  3. Once done add a tsp of ghee and just spread on a plate and cool down.
  4. Health ghee in a pan, once hot temper with mustard, urad dal, red chilli, curry leaves and asafetida.
  5. Then add grated carrots and toss for a while, then close it with a lid and cook for a minute in low flame.
  6. Add salt, switch off the stove.
  7. Mix it, add rice and mix all together well gently.
  8. Healthy, crunchy and tasty Carrot Rice is ready.
  9. Can garnish with some roasted cashews.
