Paniyaram Recipe | Kulipaniyaram Recipe is a simple and healthy Indian snacks recipe. Everyone loves to eat kuli paniyaram with spicy red, green and white chutney. By combining sesame oil and ghee, Kuzhi paniyaram’s exterior is made crispy while its interior is soft. This recipe demonstrates how to make kuli paniyaram using rice (Thooyamalli) and dal from scratch. We can prepare instant and basic kuli paniyaram with the same method using idli batter too.

Ingredients

  • 1/2 Cup Boiled rice
  • 1/2 Cup Raw rice
  • 1/4 Urad dal
  • 1 tsp Fenugreek
  • 3 tbsp grated coconut
  • 1 Onion
  • 1 Green chilli
  • Few Curry leaves
  • Few Coriander Leaves
  • Mustard
  • Urad dal
  • asafetida
  • Oil
  • Ghee
  • Salt

Directions

  1. Combine both boiled and raw rice with urad dal, fenugreek.
  2. Wash and soak them for 2 to 3 hours.
  3. Grind everything to a smooth batter.
  4. Add salt and mix well.
  5. Leave it to ferment for 6 to 8 hours.
  6. Chop onion, green chilli, Curry leaves and coriander leaves and keep them ready aside after 6 hours.
  7. In a pan add a tbsp oil, mustard, urad dal and wait for them to splutter.
  8. Then add asafetida, onio, green chilli, curry leaves and saute till onions get translucent.
  9. Add little salt and switch off the stove once done.
  10. Remove from heat and add it to the fermented batter with grated coconut and chopped coriander leaves.
  11. Mix well.
  12. Heat Kulipaniyaram pan, add little oil and ghee.
  13. Pour a little quantity of prepared batter into it.
  14. Add some more oil if required.
  15. Close the pan and cook for a minute.
  16. Then turn around and cook well.
  17. Once both the sides are well cooked and crispy, remove it from the pan.
  18. Serve hot with any spicy chutney.
