Ragi Ambali | Finger Millet Ambli Recipe is a fermented Karnataka dish served as a light and nourishing morning drink. I used traditional Sorna masuri rice starch for this dish, but you can substitute any rich starch of your choice.

Ingredients

  • 1/2 Cup Ragi Flour
  • 1/2 Cup Rice Starch water
  • Salt

Directions

  1. In a pot add Ragi flour, salt with 1 cup of water, mix well without lumps.
  2. Cook it for around 10 minutes till it gets cooked well by stirring continuously without forming lumps.
  3. Once cooked well let it get cool.
  4. Then add rice starch water, mix well and leave it to ferment overnight in an earthen pot.
  5. Mix well and consume next day morning directly or with buttermilk, small onion added which are optional.
