Ulundu Vadai | Medhu Vada Recipe is everyone’s favorite vada recipe. In order to make medu vada, urad dal and sesame oil are used to provide nutrition and ease digestion. It is a calcium-rich diet that also acts as a natural body cooler, boosting immunity.
Ingredients
- 1 Cup Whole white Urad dal
- 1 tsp Raw rice
- a small piece Ginger
- 1 Green Chilli
- 1 tsp Pepper
- Few Curry leaves
- Few Coriander leaves
- Salt
- Sesame oil
Directions
- Wash and Soak urad dal, raw rice together for 1 hour.
- Drain the water, keep the water separate and grind the urad in a wet grinder till it gets smooth and soft like butter.
- While grinding, add pepper, ginger, and green chilli.
- Don’t add too much water; just a little soaked water every now and then between grinding.
- Once batter is smooth and soft, transfer it to a bowl add salt, chopped curry leaves and coriander leaves (can also add chopped onions which is optional).
- Mix well.
- Heat sesame oil in a kadai to fry vadai.
- Keep a bowl of water to moisten your hands before taking batter to make vadai everytime.
- Dip fingers in water and take a small portion of the batter and shape it into a round, then flatten it out, and use your fingers to make a hole in the centre.
- Banana leaves can be used by beginners to produce vadai.
- After that, gently and carefully drop it into heated oil.
- Reduce the flame to medium and not low.
- Depending on the kadai, we can make 3 to 4 vadais at once.
- Simply remove the vadai from the oil once both sides have turned a rich golden colour.
- Crispy, wholesome Urad vada is Ready.
- Serve hot with coconut chutney.
