Brinjal Thokku | Kathirikai Thokku Recipe is a popular thick gravy recipe. All types of rice, including pulao, biryani, fried rice, and plain rice, go nicely with kathirikai thokku. Ingredients
- 3 nos Tender Brinjal
- 2 Tomato
- 1 Onion
- 1 tsp Chilli powder
- a pinch Turmeric
- 1/2 tsp Tamarind extract
- 1/4 tsp asafoetida
- 1/4 tsp Mustard Seeds
- 1/4 tsp Fenugreek Seeds
- Few Curry leaves
- Few Coriander leaves
- Salt
- Oil
To grind
- 4-5 Shallot / Small onion
- 2 Garlic Clove
- a small piece ginger
- 1/2 tsp Pepper
- 1/2 tsp Coriander Seeds
- 2 Red chilli
Directions
- Chop Brinjal into slices and put them in water.
- Wash, Peel, chop onions, tomato, garlic.
- Grind the ingredients that are listed under to grind and keep them ready.
- Heat sesame oil in a heavy bottom pan, splutter mustard seeds, then add urad dal, fenugreek seeds, asafetida and curry leaves.
- Then add chopped onions and saute till it gets translucent.
- Next, add the tomato and cook for a while, then add the brinjal.
- Continue Saute for a while, then add ground paste with turmeric powder, chilli powder and salt.
- Just give a stir and add tamarind extract with 1/4-1/2 cup of water.
- Put a lid on it and cook it for a while.
- Once it gets cooked well the gravy becomes thick and oil separates from the sides of the pan.
- Brinjal Thokku is Ready.
- Switch off the stove.
- Garnish with coriander leaves, Serve with hot rice, Pulao or with Biryani.
