Ingredients

  • 15-20 Okra / Vendakkai / Ladies finger
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Coriander Powder
  • 1/4 tsp Turmeric Powder
  • 1/4 tsp Mustard Seeds
  • a pinch cumin seeds
  • a pinch asafetida
  • Few Curry leaves
  • Salt
  • 2 tbsp Oil

Directions

  1. Wash the okra thoroughly and pat them dry using a kitchen towel.
  2. Remove the ends and chop them into small pieces.
  3. Heat oil in a pan or kadai over medium heat.
  4. Add mustard seeds and let them splutter.
  5. Then, add cumin seeds, asafoetida, and curry leaves.
  6. Stir for a few seconds until aromatic.
  7. Add the chopped okra to the pan. Stir well to coat the okra with oil.
  8. Cook on medium heat for about 5 minutes, stirring occasionally.
  9. Add turmeric powder, red chili powder, coriander powder and salt.
  10. Mix everything together, cover the pan with a lid, and cook for another 10-15 minutes.
  11. Keep stirring occasionally to prevent sticking.
  12. Continue cooking until the okra becomes tender and slightly crispy.
  13. If you prefer a more crispy texture, cook for a few more minutes.
  14. Once the okra is cooked, check for seasoning and adjust salt and spice levels according to your taste.
  15. Vendakkai Poriyal is Ready.
