Chettinad Kalkandu Vadai | Sweet Medhu Vada Recipe is a special sweet vadai recipe of Chettinad Region. Normally White Kalkandu is added to it; however, for health reasons, I substituted Palm Sugar / Panakarkandu.

Ingredients

  • 1 Cup Urad dal
  • 1 tbsp Bengal gram dal
  • 3/4 Cup Kalkandu (Palm Kalkandu)
  • Oil

Directions

  1. Mix Urad dal and Bengal gram dal together, wash and soak them for an hour.
  2. Drain and grind dal with very little water.
  3. When it is nearing ground add kalkandu and grind well.
  4. Heat oil.
  5. Wet your hands and take a small portion of the batter and make vada shape with a whole in the center.
  6. Drop it in hot oil and in a minute reduce flame to medium.
  7. Flip and cook both sides till it changes its color (golden to brown) and cook well.
  8. Sweet and Healthy Kalkandu Vada is Ready to Serve.
