Chettinad Seedai Recipe | Uppu Seedakkai is a crispy healthy special snack prepared for diwali in South India. Uppu Seedai are little, simple to eat, striped cylindrical, crunchy and healthy traditional snacks. Crispy Chettinad Seedai is prepared easily by simply following a few basic steps and using a few tricks and tips, such as filling the pan completely with seedai while it is being fried. One of the popular treats provided to guests all year long and made for festivals is chettinad seedai.
Ingredients
- 2 cups Idli rice
- 1/4 Cup Fried gram
- 1/4 cup Grated Coconut
- 1/2 tsp Cumin seeds
- Salt
- Coconut Oil
Directions
- Wash and Soak idli rice for 2 hours.
- Dry Powder Fried gram in mixie and Sieve finely.
- Fine sieve is must to avoid seedai bursting when frying.
- After two hours grind idli rice with less or required water in a wet grinder to a smooth batter.
- Don’t over water while grinding idli rice batter.
- In the large bowl add rice batter, fine fried gram powder, grated coconut, cumin seeds and salt.
- Mix all well.
- Add water little by little to make a smooth dough.
- Make small balls and just press it a little to flatten it or make it lengthwise.
- Place it in a cotton towel.
- Completely prepare it like the small oval flattened balls with all the dough.
- After completing making balls, heat oil in a pan.
- Coconut oil tastes great and can also use other oils.
- Add a cup of prepared seedai in hot oil without any gap in the oil.
- Don’t add seedai one by one in oil, add them in one stretch to avoid it bursting.
- Then stir in between and fry the seedai in low medium flame quite for some time till it gets crunchy and crispy.
- When bubbles and sound stop, remove it from oil and drain completely.
- Chettinad Seedai is ready to serve.
- Once cooled, store it in an airtight container.
